High above Rutherglen, the Victorian Alps cast a quiet but powerful influence over the region’s climate. Cold alpine air flows down from the mountains, funneling through valleys and settling across the landscape, bringing crisp nights that contrast with warm sunlit days. This daily temperature swing propels maturation, driving the spirit into the wood, intensifying the interaction with the barrel and enhancing the oak influence. Over time, this allows for the development of more nuanced and rounded flavours. The use of French oak adds another layer of refinement, with its tighter grain and subtle tannins encourage a slower, more nuanced extraction, contributing savoury spice, gentle structure and a silky mouthfeel to the final spirit.
